Ingredients
  • 700g Omugi flat iron steak
  • 2 lemons, finely zested & juiced
  • 2 sprigs rosemary, finely chopped
  • 1 tsp cumin seeds, cracked
  • 1 tsp coriander seeds, cracked
  • ¼ cup extra virgin olive oil
  • 3 cups cauliflower, cut into florets
  • 1 bunch mint leaves
  • ¾ cup shelled edamame
  • ¼ cup wasabi peas, crushed
  • 1 Tbsp balsamic vinaigrette
Method
  • Put the steak, zest, juice, spices and olive oil in a shallow tray, mix well, then refrigerate overnight.
  • Steam the cauliflower pieces until just tender, then refresh under cold running water. Mix with the mint, edamame, and wasabi peas. Toss with balsamic vinaigrette.
  • Cook the steaks over a hot barbecue grill for 8 minutes, turning several times, until medium rare. Set aside to rest for 2 minutes. Carve and serve with the cauliflower salad.
