Roasted Omugi T Bone steak

Ingredients
  • 1 x 500gm Omugi T Bone steak
  • 1 tablespoon sesame oil
  • sea salt flakes
  • 1/2 cup beef stock
  • 2 heaped tablespoons red miso
  • 3 tablespoons butter
  • 2 cups of mixed mushrooms (Swiss browns, shiitake, oyster, enoki, black fungi)
  • 1/2 cup hydrated wakame
Method
  • Pre heat a large skillet over moderate to high heat
  • Brush the steak on both sides with sesame oil and season liberally with salt flakes
  • Set to cook on either side till golden, cook time will vary depending on thickness of steak and preference of desired eating temperature. (I cooked my 1-inch steak for about 5 -6 minutes on either side for medium rare, and then set to rest for 5 minutes while I made my sauce)
  • Add butter to the pan, add in the mixed mushrooms, wakame and sauté for a few seconds before adding in the beef stock followed by the miso (loosen miso with a little water) Reduce by half then remove from heat
  • To serve, carve steak and nap with sauce. Serve immediately
